Collards are packed with nutrients, especially Vitamin C and are pretty cold hardy, it’s flavor improves after a light frost, and they will even survive through the winter here in a high tunnel. It has a mild cabbage-esque flavor and will produce through the season. Harvest the oldest most mature leaves from the outside of the plant, snapping or cutting the stems off close the base of the plant and it will continue to put out new growth from the center.
